|Rockland Farm Alliance's Kale Salad|
- a raw food classic -
Kale - one big bunch, washed and stripped from stalk, spun, "torn" into mouth size pieces
Ripe Avocado - cut small and then "mushed"
Roasted Pine Nuts - half a cup, or more if you love them so much, can be replaced with Pumpkin seeds or any other seed or nut
1/2 a Lemon, juiced, or lime
Olive Oil - 1/4 cup or an oil of your choice
Dry roast pine nuts in a skillet.
Put all the kale in a big bowl. Sprinkle with salt. Pour the lemon juice and oil all over it.
Now massage it with both hands - go deep! Make the leaves become smooth and dark green.
Cut or squeeze the avacado into it and mix it well with the kale.
Top with the roasted nuts and enjoy!!!
